This soup is a twist off the cabbage soup diet. I didn't like the classic recipe, so I decided to create my own. It's lower in sodium, flavorful, & delicious with a hint of curry powder. Easy to prepare & to make. Ingredients:
1 lb green cabbage (chopped) |
1 onion (chopped or diced) |
2 celery ribs (diced) |
1 1/2 tablespoons garlic paste |
1 1/2 teaspoons curry powder |
1 anise seed (optional) |
1 (32 ounce) swanson chicken broth |
Directions:
1. * Heat up 1-2 tsp oil in dutch oven. 2. * Saute onion, celery & garlic til soft. 3. * Add curry powder & star anise, cook 1 minute. 4. * Add Cabbage. 5. * Add 32 oz. chicken broth. 6. * Let the soup boil for 15 minutes. 7. * Lower heat & cover, simmer for 20 minutes or until cabbage reaches a desired consistency. |
