âI came up with this tender turkey loaf to help my husband and me stick to our healthy-eating habits. Leftover slices make satisfying lunches to take to work the next day.â âMary Gudenkauf, Harrisonville, Missouri Ingredients:
2 cups soft bread crumbs |
1 medium apple, finely chopped |
1 cup finely chopped fresh mushrooms |
1 small red onion, finely chopped |
2 egg whites, lightly beaten |
1 egg, lightly beaten |
1 to 2 teaspoons curry powder |
1 teaspoon salt |
1 pound lean ground turkey |
topping: |
2 tablespoons butter |
2 medium apples, finely chopped |
1 small red onion, finely chopped |
1/2 cup unsweetened apple juice |
1 teaspoon curry powder |
1/4 teaspoon salt |
Directions:
1. In a large bowl, combine the first eight ingredients. Crumble turkey over mixture and mix well. Pat into a greased 9-in. x 5-in. loaf pan. 2. Bake, uncovered, at 350° for 50-60 minutes or until no pink remains and a thermometer reads 165°. 3. In a small saucepan, melt butter. Add the remaining topping ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes or until apples and onion are tender. 4. Let meat loaf stand for 5-10 minutes before slicing. Serve with warm topping. Yield: 6 servings. |
