Curried Zucchini/Potato Soup |

From the Cheap Healthy Good blog. So delicious!!!!!!!!!!! Ingredients:
1 tablespoon olive oil |
1 medium chopped onion (3/4 cup) |
1 tablespoon salt |
2 minced garlic cloves |
2 teaspoons curry powder |
1 1/2 lbs zucchini, sliced 1 inch thick (3 zucchini) |
1 baking potato, peeled and cut into 1 inch chunks |
4 cups water |
Directions:
1. In a big pot, heat the oil on medium heat. 2. Add onion and salt. 3. Cook until onion is tender and translucent (4-5 minutes, stirring occasionally). 4. Add garlic and curry. 5. Cook 0.5-1 minute, stirring constantly, until fragrant. 6. Add zucchini, potato, water. 7. Increase heat. 8. Once it boils, turn heat to medium-low. 9. Cook 10-15 minutes, until veggies are tender. 10. Puree soup in blender. |
