If you can't find crisp, juicy Red Delicious apples, you may substitute Gala apples.
Ingredients:
1/4 cup fat-free mayonnaise
1/4 cup plain fat-free yogurt
2 teaspoons fresh lemon juice
1/2 teaspoon curry powder
1/4 teaspoon salt
1/8 teaspoon pepper
2 medium red delicious apples, cored and cubed
1/4 cup chopped celery
2 tablespoons raisins
2 tablespoons chopped toasted walnuts
Directions:
1. Combine first 6 ingredients in a medium bowl; stir well with a whisk.
2. Add apple and remaining 3 ingredients, tossing to coat.
