Quinoa with veggies and curried, durr. Ingredients:
2 tablespoons olive oil |
1 cup chopped onion |
3 garlic cloves, chopped |
2 teaspoons paprika |
1 teaspoon salt |
1 teaspoon ground black pepper |
1 teaspoon ground coriander |
1 teaspoon ground cumin |
1 teaspoon turmeric |
1 teaspoon ground ginger |
1/2 teaspoon cayenne pepper |
3 cups water |
14 1/2 ounce diced tomatoes |
2 tablespoons fresh lemon juice |
2 carrots |
1 zucchini |
1 cup chopped cauliflower |
1 cup sugar snap peas |
1 sweet potato |
2 cups chopped celery |
1/2 cup chopped cilantro |
Directions:
1. Heat oil in large saucepan over medium heat. Add onion; sauté until soft, stirring often, about 5 minutes. Add garlic; stir 1 minute. Mix in paprika and next 8 ingredients. 2. Add 1 cup water, tomatoes, and lemon juice. Bring to boil. Add vegetables and quinoa. Cover and simmer over medium-low heat until vegetables are tender, stirring occasionally, about 20 minutes. 3. Stir in cilantro. Season with salt and pepper. |
