Quinoa with veggies and curried, durr.
Ingredients:
2 tablespoons olive oil
1 cup chopped onion
3 garlic cloves, chopped
2 teaspoons paprika
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon turmeric
1 teaspoon ground ginger
1/2 teaspoon cayenne pepper
3 cups water
14 1/2 ounce diced tomatoes
2 tablespoons fresh lemon juice
2 carrots
1 zucchini
1 cup chopped cauliflower
1 cup sugar snap peas
1 sweet potato
2 cups chopped celery
1/2 cup chopped cilantro
Directions:
1. Heat oil in large saucepan over medium heat. Add onion; sauté until soft, stirring often, about 5 minutes. Add garlic; stir 1 minute. Mix in paprika and next 8 ingredients.
2. Add 1 cup water, tomatoes, and lemon juice. Bring to boil. Add vegetables and quinoa. Cover and simmer over medium-low heat until vegetables are tender, stirring occasionally, about 20 minutes.
3. Stir in cilantro. Season with salt and pepper.
