vegan Ingredients:
3 t olive oil |
1 t curry powder |
1/2 t cumin seeds |
2 c eggplant, cubed |
3 jalapeno peppers, seeded and minced |
4 yukon gold potatoes, cubed |
3 tomatoes, diced |
1/2 t salt |
1/2 t chili powder |
1/2 t turmeric, ground |
1/4 c chopped fresh cilantro |
Directions:
1. heat oil with curry powder and cumin until aromatic 2. Stir in eggplant, jalapenos, potatoes, tomatoes, salt, chili powder and turmeric 3. Cover and cook 30 to 45 minutes, adding water if necessary to maintain stew-like consistency 4. Sprinkle with cilantro before serving |
