Creamy curried vegetable stew Ingredients:
2 medium potatoes, peeled and diced |
1/2 pumpkin, peeled and diced |
1/4 cup red lentils |
1 onion, finely chopped |
2 cloves garlic, crushed |
a tablespoon fresh herbs (coriander, parsley) chopped |
200ml coconut milk/ cream |
a tablespoon curry powder |
1/2 cup frozen peas |
a tablespoon butter |
little water |
Directions:
1. Heat butter in large saucepan over low heat, saute onion for 2 minutes, add garlic and curry powder. Stir in red lentils, pour a little water into sauce pan, add pumpkin and potato, cover and simmer for 10 minutes. 2. Check that vegetables are tender before stirring in coconut cream/ milk, and frozen peas, simmer for a further 2 minutes and adjust salt and pepper to taste. 3. Serve over rice and garnish with fresh herbs. |
