Curried Turkey Wraps (Great for Leftovers) |

This has Thanksgiving (or any day) turkey leftovers written all over it. I found this in the Christmas 2008 copy of BBC Good Food Magazine. In the UK, turkey is a Christmas day food and a turkey curry has become a semi-traditional day after meal to make with the leftovers. So, a sandwich version sounds promising. You could even make this pretty guilt free with low fat or fat free versions of the mayo and creme fraiche/sour cream. Ingredients:
10 1/2 ounces cooked turkey, shredded |
3 tablespoons mayonnaise |
3 tablespoons creme fraiche or 3 tablespoons sour cream |
2 teaspoons mild curry powder |
1 apple, finely chopped |
lemon juice |
4 flour tortillas |
1/2 cup lettuce, shredded |
1/3 cup cherry tomatoes, sliced |
1/4 cup fresh cilantro leaves (optional) |
Directions:
1. Mix shredded turkey with mayo, creme fraiche/sour cream, curry powder, apple and a squeeze of lemon juice in a bowl. 2. Divide mixture between four tortilla wraps. 3. Top with lettuce, cherry tomatoes and sprinkle with cilantro leaves. 4. Wrap up and serve. |
