My Mom used to make this dish as a meal for hot summer evenings. Ingredients:
7 ounces canned tuna (drained) |
2 cups cooked rice |
1 cup shredded carrot |
1 cup diced celery |
2 tablespoons chopped onions |
1 cup mayonnaise |
1 teaspoon curry |
2 teaspoons lemon juice |
1/4 teaspoon salt |
Directions:
1. Combine mayo,curry,lemon juice and salt. Chill. 2. Combine tuna, rice, carrots,celery and onion. 3. Toss with mayo mixture and chill at least 2 hours. |
