Even people who say they hate bean curd really like this tangy, slightly sweet curry. Itâ??s best made with fresh tomatoes. Serve with yellow saffron rice. Adapted from HEALTH, May 2003. **Ingredients: olive oil ginger root, garlic, firm tofu, fresh tomatoes, chili sauce Madras curry powder sugar salt ground black pepper cvt Ingredients:
2 tsp olive oil |
1 tbsp fresh ginger root, peeled and grated |
2 cloves garlic, minced |
1 pound firm tofu, drained and cubed |
3 cups tomatoes, seeded (or use cherry tomatoes or canned) |
3 tbsp chili sauce |
2 tsp (madras) curry powder |
1 1/2 tsp sugar |
1/2 tsp salt |
1/4 tsp freshly ground black pepper |
Directions:
1. Heat the oil in a large nonstick skillet over medium heat. 2. Add the ginger and garlic and stir-fry 30 seconds. 3. Add the tofu and remaining ingredients, and stir-fry 5 minutes, or until thoroughly heated. |
