Curried Tofu and Chickpeas |

An easy and high-protein vegan recipe I like to eat with a salad after a workout. Ingredients:
1 onion, chopped |
1 garlic clove, minced |
2 teaspoons ground cumin |
1 teaspoon ground coriander |
1/2 teaspoon turmeric |
1/4 teaspoon black pepper |
1 pinch chili pepper |
400 g tofu, cut into cubes |
1 (400 g) can undrained chickpeas |
2 tomatoes, chopped |
1 pinch salt (to taste) |
Directions:
1. Saute the onion and garlic with a little water or oil spray until the onions are translucent, stirring occasionally. 2. Stir in the spices. 3. Add the cubed tofu and cook for a minute or so, stirring. 4. Add the chickpeas and about 1/2 cup of their liquid, and simmer for 5. 5. minutes. 6. Add the tomatoes and continue to cook until thoroughly heated. Add. 7. salt to taste. |
