Adapted from recipe by Polly Pitchford, Full Spectrum Healthâ?¢ Red garnet sweet potatoes are best if you can find them. In fact, any orange vegetable works well here: butternut squash or carrots for example. Spanish onion, curry, sweet potatoes, salt, olive oil cumin water or chicken broth ginger powder cvt Ingredients:
1/2 spanish onion (wt ), chopped (or yellow or red) |
1 teaspoon olive oil |
1 teaspoon curry powder |
520 g (about 4) sweet potatoes, peeled and cubed |
4 cups water or chicken broth |
1 teaspoon salt, or to taste |
1/2 teaspoon cumin |
1/2 teaspoon ginger powder |
Directions:
1. In a large soup pot, saute onion with spices in the olive oil until onion is soft, about 5 minutes. 2. Place sweet potatoes or squash in soup pot with the water and salt. Boil gently until vegetables are soft. Add the sauteed onions. 3. Puree in a blender in batches. 4. Garnish with chopped parsley, scallions or garlic croutons. |
