Might I suggest Morton & Bassett curry powder or at least your own homemade fresh stuff? It is going to be the quality of the curry that carries this. Ingredients:
6 hard-boiled eggs, shelled |
2 teaspoons fresh lemon juice |
1 teaspoon curry powder |
1 teaspoon minced green onion |
1 teaspoon soy sauce |
1 tablespoon mayonnaise |
Directions:
1. Halve eggs lengthwise and remove yolks. 2. Put yolks through a sieve or mash with a fork. 3. Add the lemon juice, curry, onion and soy sauce to the yolks. 4. Moisten mixture with the mayonnaise. 5. Fill the hollowed egg whites with the mixture. 6. Note: a small dash of fresh ground red pepper will liven up the party if you have a dull curry. |
