Found this in the local paper and decided to put it here for safe keeping...sounds easy....and quick! Ingredients:
1 (10 ounce) package frozen pureed winter squash |
1/2 cup light coconut milk |
1/2 cup water |
1 (6 ounce) bag baby spinach |
2 teaspoons brown sugar |
1 teaspoon thai red curry paste |
2 teaspoons lime juice |
Directions:
1. In medium saucepan, combine squash, coconut milk, water, spinach, brown sugar and curry paste. Heat, stirring occasionally, until hot. Stir in lime juice. |
