4 cups reduced sodium chicken broth or water |
2 cups yellow split peas |
1 medium onion, chopped |
1 tablespoon curry powder |
1 teaspoon salt, or to taste |
Directions:
1. Combine broth, peas, onion, and one bay leaf in a soup pot and bring to a boil. Turn heat to low, add curry and simmer for 40 minutes or until the peas are tender. Add salt to taste and simmer a few minutes more. |
