American Cole slaw meets Indian curry. A non traditional great tasting change. Ingredients:
3 cups thinly shredded white cabbage |
3cups thinly shredded red cabbage |
1-cup nonfat plain yogurt |
3 tablespoons orange juice |
1 teaspoon orange zest |
1 tablespoons sherry vinegar |
1-teaspoon honey mustard |
2 garlic cloves, minced |
1-teaspoon curry powder |
1/2 teaspoon ginger |
1/4 cup toasted cashew pieces |
Directions:
1. In a large bowl, combine the shredded cabbages. 2. In a small mixing bowl, make the dressing by combing the yogurt, orange zest, orange juice, vinegar, mustard, garlic, and spices. Whisk together well. 3. Pour over the shredded cabbage and toss well to coat. 4. Cover and chill for 2 hours. 5. Add in the cashew just before serving. |
