Curried shrimp & artichoke salad |

this is one of the easiest main meal salads to prepare. serve with fresh asparagus and cold sliced tomatoes. Ingredients:
1 (8 ounce) box chicken rice pilaf mix |
1 lb cold boiled peeled shrimp |
3 green onions, sliced |
1/2 chopped bell pepper |
15 sliced green olives |
2 (6 ounce) jars marinated artichoke hearts |
1 1/2 cups mayonnaise |
1/2 teaspoon curry |
Directions:
1. prepare rice per directions on box; cool. 2. mix mayo with 1/2 jar marinade from artichokes. 3. combine above with all remaining ingredients& toss until well mixed. 4. chill for at least 1 hour before serving on a bed of butter lettuce. |
