Curried Shrimp Artichoke And Rice Salad

A unique cold rice salad. It's great for when you have a little bit of shrimp leftover and you want to stretch it.
Ingredients:
1 package chicken rice-a-roni, cooked and cooled
2 green onions, chopped
1/4 cup green pepper, chopped
6 oz. jar marinated artichoke hearts, drained saving 1/4 cup juice, and chopped
black olives, sliced or chopped
small can of mushrooms, drained
1/2 pound shrimp, cooked, cooled and chunked
1/4 tsp curry powder
1/3 cup mayonnaise
reserved 1/4 cup of artichoke juice
Directions:
1. Prepare rice-a-roni according to package directions;
2. Boil or steam shrimp;
3. Add onions, green peppers, artichokes, olives, and mushrooms to cooled rice-a-roni;
4. Fold in chunked shrimp;
5. Add mayo, curry powder and reserved juice, and blend well;
6. Chill before serving.
