breakfast Ingredients:
1/3 block firm tofu, drained for about 15 minutes (we use 'soft') |
1/2 tsp turmeric |
2 tbsp milk (optional) |
1/2 tsp oil |
1/2 tsp black mustard seeds |
2 tbsp diced onion |
2 tbsp diced bell pepper |
1/4 cup diced tomato |
1 salt and pepper |
1 tsp cumin powder |
2 tsp coriander powder |
1/4 tsp paprika or cayenne |
Directions:
1. In a small bowl, smash the tofu with the salt and turmeric. Set aside. 2. In a medium skillet, heat the oil until it is sizzle-hot. Add the black mustard seeds and cover the pan while they pop. As soon as the popping quits, add the onion and the masala. Stir and cook for a minute. 3. Add the bell pepper and the tomato. Keep cookin' for another 1-2 minutes. 4. Add the tofu mixture to the pan. Cook through |
