Simple, easy and quick. Ingredients:
1 tablespoon olive oil |
1 large onion, chopped |
2 carrots, chopped |
2 garlic cloves, chopped |
2 teaspoons curry powder |
1 cup long grain white rice |
1 1/2 lbs large shrimp, peeled and devained |
salt and pepper |
1/2 cup fresh basil |
2 1/2 cups water |
Directions:
1. Heat oil in a large skillet over medium heat. Add onion and carrots and cook, stirring occasionaly until soft,6-8 minutes. 2. Add garlic and curry and cook, stirring, until fragrant, 2 minutes. 3. Add rice, 2 1/2 cups water ,1/2 teaspoons salt and pepper. bring to a boil. 4. Reduce heat to med-low , cover and simmer for 15 minutes. 5. Season the shrimp with 1/2 teaspoons salt and 1/4 tsp pepper and nestle them in a partially cooked rice. 6. Cover and cook until the shrimp are opaque throughout 4-5 minutes. 7. Fold in the basil and serve. |
