I make this homey rice dish often. It's easy and fragrant and something a little different from the usual plain rice. Ingredients:
1 tbsp butter |
1 c uncooked long grain rice |
1 tbsp olive oil |
1 onion, diced |
1 stalk celery, sliced |
1 tbsp curry powder |
1 3/4 c chicken broth |
1/2 tsp pepper |
1/2 tsp salt |
1/2 c raisins |
1/2 c pecans, chopped |
Directions:
1. In a large saucepan melt the butter then add the rice and cook for about 5 minutes or until browned. Remove and set aside. 2. In the same pan heat the olive oil then add the onion, celery, and curry powder and cook for about 5-10 minutes or until veggies are softened. 3. Stir the rice back in and add the chicken broth, salt and pepper. Bring to a boil. 4. Lower the heat and simmer for about 20 minutes or until rice absords liquid. 5. Stir the raisins and pecans in and cook until heated through. |
