Easy and delicious curry rice pilaf. Ingredients:
1 chopped onion |
2 smashed garlic cloves |
1 cinnamon stick |
strip of lemon zest |
1/2 tsp curry powder |
pinch of tumeric |
butter |
olive oil |
1 c basmati rice |
1-1/3 c water |
salt |
lemon juice |
cilantro cashews |
Directions:
1. Saute onipn,garlic cinnamon,lemon zest,curry powder and tumeric in a saucepan with butter and olive oil until lightly browned. 2. Add basmati rice and stir till toasted. Add water,season eith salt and bring to a boil;then cover and simmer 15 mins. Let sit 5 mins,then fluff with fork and add a splash of lemon juice and some cilantro and cashews. |
