Quick and easy dish. Ingredients:
1 cup brown rice |
2 cups chicken broth |
1 teaspoon curry powder |
1 onion, chopped |
2 garlic cloves, chopped |
8 ounces firm tofu |
15 ounces pink beans |
15 ounces whole kernel corn |
15 ounces diced tomatoes |
Directions:
1. Prepare rice with broth and curry separately. Saute onion, garlic until soft. 2. add remaining ingredients, add rice. Serve. |
