Curried Rice and Bean Salad |

Healthy. Can you say that on TV? Ingredients:
3 cups cooked brown rice |
1 1/2 cups cooked red kidney beans |
4 green onions, chopped |
1/2 green bell pepper, diced |
2 celery ribs, diced |
1/4 cup chopped fresh parsley |
1/2 cup plain nonfat yogurt |
2 teaspoons curry powder |
black pepper (to taste) |
salt (to taste) |
Directions:
1. Mix yogurt, and curry powder together in a small bowl; season to taste with salt and black pepper. 2. Combine remaining ingredients in a salad bowl. 3. Pour dressing over salad and toss to mix. 4. Marinate salad, refrigerated, for 2 hours, before serving. |
