This recipe goes with Crunchy Catfish Fingers with Curried Rice Ingredients:
1 cup uncooked long-grain white rice |
1 small onion, chopped |
1 apple, peeled and chopped |
1 tablespoon curry powder |
1 teaspoon minced garlic |
2 teaspoons olive oil |
vegetable cooking spray |
2 cups fat-free reduced-sodium chicken broth |
1/4 teaspoon salt |
1/4 cup golden raisins |
1/4 cup sliced green onions |
2 tablespoons slivered almonds, toasted |
Directions:
1. Sauté uncooked rice and next 4 ingredients in hot oil in a large saucepan coated with cooking spray 5 minutes. (Do not brown.) Stir in broth and salt; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Stir in raisins, green onions, and toasted almonds. |
