A simple curried rice that will spice up any bland meat dish. Ingredients:
1 cup rice |
1 apple, cored and peeled |
3 tablespoons butter |
1/2 cup onion, finely chopped |
1 garlic clove, minced |
1 tablespoon curry powder |
1 small bay leaf |
1 1/2 cups chicken broth |
Directions:
1. Cut the apple into cubes. Heat 2 tbsp butter in saucepan and add the onion and garlic. Cook until onion wilts. 2. Stir in the apple and curry powder. Add rice, bay leaf and chicken broth. Cover and cook 17 minutes over low heat. 3. When rice is done, add 1 tablespoon butter and fluff with fork. |
