The curry adds a great color and a wonderful flavor to the rice. Serve with any grilled or roasted meats. Ingredients:
1 tablespoon butter |
1/3 cup onion, finely chopped |
1 garlic clove, minced |
1 tablespoon curry powder |
1 bay leaf |
salt, to taste |
fresh ground black pepper, to taste |
1 cup uncooked rice |
1 1/2 cups chicken broth (low-sodium canned or homemade) |
Directions:
1. Heat butter in a saucepan. Add the onion and garlic. Cook, stirring, until soft. Add the remaining ingredients, except the chicken broth, stirring to coat grains. 2. Add the chicken broth. Cover. Bring to a boil. Reduce heat. Cook 15 to 20 minutes, until rice is tender. Remove the bay leaf and serve. |
