So delicious and nutritious! The salty/sweet combination is wonderful. Ingredients:
1 tbsp cumin seeds |
1 tbsp olive oil |
2 cloves garlic |
1 tbsp grated ginger |
1/2 cup orange juice |
zest of one orange |
2 cups vegetable broth |
1 tsp turmeric |
1 medium sweet potato, peeled and cubed into small pieces |
1 apple, peeled and cubed into small pieces |
1/2 cup raisins |
1 cup quinoa |
salt and pepper to taste |
Directions:
1. Toast cumin in dry pan for 2 minutes or until fragrant 2. Heat oil in skillet and saute garlic and ginger for 2 minutes. 3. Combine all ingredients in large pot. 4. Bring to a boil, then simmer for 30-45 minutes (or until the quinoa and sweet potatoes are fully cooked), adding water as needed. |
