The spicy soup is great for when you're tired of broth-based soups. The cream makes this soup feel sinful, but the low amount of it per serving keeps the fat and calories low. Ingredients:
30 oz chicken broth |
30 oz pumpkin |
2 c. cream |
2 t. grated fresh ginger |
4 t. curry powder |
1 salt and pepper to taste |
Directions:
1. In a 4-qt. pot, combine all the ingredients, add salt and pepper to taste, and bring just to a boil. 2. Reduce the heat to medium-low and simmer uncovered for 15 minutes. 3. Serve warm, garnished with chopped chives, if desired. (Garnish not included in nutritional analysis). |
