Great sweet curry potato salad, can make it vegan by adding nayonaise instead of the mayo, excellent the next day. Recipe from Green Cuisine Cookbook, 2006 Ingredients:
4 1/2 medium potatoes, peeled and cubed |
1 green onion, sliced |
1/2 cup parsley, chopped |
3/4 cup mayonnaise |
1 1/2 tsp curry paste |
1/3 cup raisins |
1/4 tsp cumin seeds |
1/4 tsp salt |
1/4 tsp turmeric |
Directions:
1. Boil the potatoes until they can easily be pierced with a fork, about 15 to 20 minutes. 2. Drain and let cool 3. Add the chopped green onions and parsley and all the other ingredients. 4. Tip: If the curry paste is thick, mix it with the mayonnaise so it spreads evenly. |
