Curried Potato Salad (Non-Vegan)

Great sweet curry potato salad, can make it vegan by adding nayonaise instead of the mayo, excellent the next day. Recipe from Green Cuisine Cookbook, 2006
Ingredients:
4 1/2 medium potatoes, peeled and cubed
1 green onion, sliced
1/2 cup parsley, chopped
3/4 cup mayonnaise
1 1/2 tsp curry paste
1/3 cup raisins
1/4 tsp cumin seeds
1/4 tsp salt
1/4 tsp turmeric
Directions:
1. Boil the potatoes until they can easily be pierced with a fork, about 15 to 20 minutes.
2. Drain and let cool
3. Add the chopped green onions and parsley and all the other ingredients.
4. Tip: If the curry paste is thick, mix it with the mayonnaise so it spreads evenly.
