The best curried hash browns I have ever made. crunchy and full of spice Ingredients:
2 large russet potatoes shredded in a food processer |
1/4 cup diced red onion |
1 clove of garlic minced |
1 teaspoon of sea salt |
1teaspoon of curry powder |
1-teaspoon chili powder |
3 tablespoons olive oil |
1/2-teaspoon fresh ground black pepper |
2 tablespoons fresh lemon |
4 tablespoons fresh parsley |

Directions:
1. Heat a griddle on high add, the olive oil and the red onions cook for a few minutes then add the garlic and the shredded potatoes. 2. Sprinkle the herbs and spices evenly over the potatoes. 3. Squeeze the juice of 1 lemon over potatoes. 4. Continue to fry the potatoes for about ten minutes, or until browned and crisp. 5. Turn them over and brown on other side. 6. Place onto a plate and garnish with a few fresh parsley leaves |
