Curried Pork and Pepper Stir Fry |

A quick and easy stir fry that I usually serve over white rice. Chicken also works well here. Ingredients:
2 garlic cloves, minced |
2 teaspoons fresh ginger, minced |
2 teaspoons curry powder |
1 teaspoon ground coriander or 1/2 teaspoon ground cumin |
1/2 teaspoon salt |
1/8 teaspoon cayenne pepper |
1 lb boneless pork, cut into strips |
1 tablespoon peanut oil |
1 green bell pepper, diced |
1 red bell pepper, diced |
8 ounces pineapple chunks in juice |
2 tablespoons honey |
1 tablespoon cilantro, chopped |
Directions:
1. Combine garlic, ginger, curry powder, coriander (or cumin), salt, cayenne and toss with pork strips. 2. Heat oil in a large skillet or wok and cook pork 2 to 3 minutes. 3. Stir in peppers. Cook 3 to 4 minutes. 4. Add pineapple, juice and honey. Cook 2 minutes. 5. Stir in cilantro and serve. |
