This is a great side dish if you like peas and curry. I had this at my friend's international dinner party and it was amazing. Enjoy Ingredients:
4 teaspoons coconut milk |
1 teaspoon chili powder |
1-1/2 teaspoons ground coriander seed |
1/8 teaspoon ground turmeric |
1/4 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
2 teaspoons ginger oil |
1 white onion chopped |
1 small cinnamon stick |
1/2 teaspoon cumin seeds |
4 tomatoes chopped |
1 pound fresh pea pods shelled |
Directions:
1. In small bowl mix coconut milk, chili powder, coriander, turmeric and salt. 2. In medium sauté pan heat oil over medium heat. 3. Add onion, cinnamon stick and cumin seeds then sauté until onions are soft. 4. Stir in tomatoes, peas and coconut milk then reduce heat and simmer until peas are tender. |
