I collected recipes for a number of years, but failed to write down the source of this one. Ingredients:
2 tablespoons peanut oil |
1 cup regular long grain rice, uncooked |
1/4 cup sliced green onion |
2 teaspoons curry powder |
1 (14 ounce) can chicken broth |
1/2 cup frozen peas, thawed |
1/2 cup unsalted dry roasted peanuts |
Directions:
1. In a 2 quart saucepan over medium heat, in hot oil, cook rice and green onion with curry powder until rice is browned. 2. Add broth, heat to boiling, reduce heat to low. 3. Cover; simmer 20 minutes. 4. Add peas and peanuts. 5. Cook 5 minutes more. |
