This crunchy, colorful salad makes a delicious picnic side dish. Ingredients:
1 (12-ounce) package tricolored rotini |
2/3 cup plain fat-free yogurt |
1/4 cup light mayonnaise |
3 tablespoons fresh lime juice |
2 teaspoons sugar |
1 1/2 teaspoons curry powder |
1/2 teaspoon salt |
1/4 teaspoon ground red pepper |
1/4 teaspoon ground black pepper |
1 granny smith apple, diced |
1/4 cup dried cherries or sweetened dried cranberries |
4 green onions, thinly sliced |
2 carrots, grated |
1/2 cup soy nuts* or slivered almonds, toasted |
Directions:
1. Cook tricolored rotini according to package directions, omitting salt and fat; drain. 2. Stir together yogurt and next 7 ingredients in a large bowl. Add pasta, apple, and next 3 ingredients, tossing to coat. Sprinkle with soy nuts. Serve immediately. Prep: 25 min., Cook: 15 min. |
