To die for. Ingredients:
1 1/2 pound cooked chicken breast |
1/2 cup reduced fat mayonnaise |
1/3 cup plain fat-free yogurt |
5 teaspoons curry powder |
1 tablespoon fresh lime juice |
1 teaspoon honey |
1/2 teaspoon ground ginger |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
1/2 cup red onion, chopped |
1 mango, medium, firm-ripe and peeled |
3/4 cup red seedless grapes cut in half |
1/2 cup walnuts, coarsely chopped |
Directions:
1. Chop the chicken into 1/2-inch pieces. 2. Whisk together mayonnaise, yogurt, curry, lime juice, honey, ginger, salt, and pepper in a large bowl. 3. Add chicken, onion, mango, grapes, and walnuts and stir gently to combine. |
