Curried Lentils And Couscous |

A really yummy concoction I threw together one day and ended up liking. You can add more or less cayenne pepper depending on how spicy you want it. Ingredients:
1-1/2 cup lentils |
1-1/4 cup couscous |
1 carrot |
1 red pepper |
4 or 5 garlic cloves |
about 1 tablespoon minced fresh ginger |
1/4 teaspoon cinnamon |
1/4 teaspoon cayenne pepper |
salt to taste |
fresh-ground black pepper |
olive oil |
Directions:
1. Bring lentils, ginger and about 4 cups water to boil; reduce heat 2. and cover. 3. Simmer over low heat till lentils are cooked (about 1/2 hour). 4. Chop carrot, pepper & garlic and fry. 5. Add 1-1/4 cup boiling water to couscous, cover, and leave 5 min. 6. Mix all ingredients together with some olive oil. |
