Quick and easy vegetarian fare Cook time does not include soaking time for lentils Ingredients:
250 g lentils |
2 cups water |
1 large onion, chopped |
1 apple, chopped |
1 clove crushed garlic |
curry powder |
1 bay leaf |
2 tablespoons sultanas |
pepper |
1 tablespoon lemon juice |
1/2 cucumber, chopped |
Directions:
1. Soak lentils (pref over night). 2. Microwave lentils on high for approx 12-15 min inthe same water they soaked in. Drain. 3. Place onion, apple, garlic, curry powder, bay leaf and sultanas in a microwave safe dish and cook on high for 5-7 mins. Add lentils, pepper and lemon juice, stir. 4. Add cucumber and serve with white rice. |
