Curried Lentils

Quick and easy vegetarian fare Cook time does not include soaking time for lentils
Ingredients:
250 g lentils
2 cups water
1 large onion, chopped
1 apple, chopped
1 clove crushed garlic
curry powder
1 bay leaf
2 tablespoons sultanas
pepper
1 tablespoon lemon juice
1/2 cucumber, chopped
Directions:
1. Soak lentils (pref over night).
2. Microwave lentils on high for approx 12-15 min inthe same water they soaked in. Drain.
3. Place onion, apple, garlic, curry powder, bay leaf and sultanas in a microwave safe dish and cook on high for 5-7 mins. Add lentils, pepper and lemon juice, stir.
4. Add cucumber and serve with white rice.
