Curried Lentil, Wild Rice and Orzo Salad |

salad Ingredients:
1/2 cup wild rice |
2/3 cup lentils |
4 oz orzo pasta |
1/2 cup currants |
1/4 cup red onion |
1/3 cup almonds |
2 oz white vinegar |
1 tsp cumin |
1 tsp dijon mustard |
1/2 tsp sugar, salt, coriander |
1/4 tsp turmeric, paprika, nutmeg, cardamon |
1 pinch cinnamon, cloves, cayenne pepper |
1/4 cup canola oil |
Directions:
1. Cook pasta, rice and lentils separately according to directions. 2. Add currants and onion 3. Mix all other ingredients 4. Pour over and refridgerate up to 24 hours or more 5. Sprinkle almonds on top before serving |
