4 garlic cloves |
3 tbsp ginger |
4 c diced eggplant |
2 c dried lentils |
8 c water |
1 c canned tomato puree |

Directions:
1. saute onions, ginger and garlic, add spices and toast 2. add tomato past, lentils and water 3. once lentils are tender add spinach cilantro and peas, and cook until warm. 4. makes 8 x 1 c portions |
