A vegetarian pate Ingredients:
4 oz red lentils |
1 carrot, grated |
1 onion, finely chopped |
10 g butter |
1 pinch cumin seeds |
1 pinch ground coriander |
1 pinch turmeric |
1 pinch chili powder, or |
1 tsp curry powder |
1 tablespoon (fresh) coriander, chopped |
200 ml water (plus an extra 200ml) |
Directions:
1. Place the lentils in a small saucepan with 400mls water and bring to the boil. 2. Cover and simmer for 10 minutes, turn off the heat and allow to sit for 5 - 10 more minutes. 3. Heat the butter in a non-stick pan and add the finely chopped onion and grated carrot. Cook until golden and then add the curry spices/powder and cook for another minute 4. Drain the cooked lentils well and mash with a fork if necessary. Add the carrot/onion/spice mix and chopped coriander 5. Season with salt and pepper 6. Refrigerate overnight then use as a savoury spread in sandwiches or on toast |
