Curried Lamb Shoulder Stew |

Serve over pasta or rice. Pol Martin Cookbook. Ingredients:
2 tablespoons olive oil |
3 lbs lamb shoulder, in large cubes |
1 large onion, chopped |
2 garlic cloves, smashed and chopped |
3 tablespoons curry powder |
3 tablespoons flour |
3 cups chicken stock, heated |
2 plantain bananas, sliced |
salt, to taste |
black pepper, to taste |
Directions:
1. preheat oven to 350*F. 2. heat oil in ovenproof saute pan over high heat. add meat and sear on all sides for 6 minutes. season with salt and pepper. 3. add onions and garlic. mix and cook 4 minutes over high heat. add curry powder, mix well and cook 3 minutes. 4. mix in flour and cook 3 minutes over med heat. 5. incorporate chicken stock, season well and bring to a boil. cover and cook 2 hours in oven. 6. fifteen minutes before end of cooking, add plantains. |
