                    Egg sandwiches with a twist! Ingredients: 
                    
                        
                                                4 eggs, hard-boiled, peeled  |  
                                                1/4 cup good-quality mayonnaise  |  
                                                2 teaspoons curry powder  |  
                                                2 tablespoons chopped parsley  |  
                                                2 ounces unsalted butter, softened  |  
                                                12 slices whole wheat bread  |  
                                                1 bunch watercress  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Mash eggs with mayonnaise and curry powder, stir in parsley and season to taste. 2. Butter bread and divide filling between 6 slices. 3. Add cress, top with remaining slices, remove crusts and serve cut into quarters.                              |
