I have two really awesome curried egg salad recipes in my everyday arsenal, and because my other half hates the smell of eggs boiling, I can very rarely make them. Once in a while, I say f#k it and make it for myself anyway. Ingredients:
2 eggs |
1/4 cup diced white or green onion |
1/4 cup diced tomato |
1 1/2 tbspns curry |
1 tbspn tarragon, basil, chili, onion and garlic powder |
1/2 tspn smoked paprika and cumin |
mayo, salt and pepper to taste |
Directions:
1. Boil eggs for 15 minutes in salted water. 2. Peel off the shells with cold water and put into a bowl 3. Mash with a fork, don't try to chop it with a spoon, you'll be there forever, trust me. Add tomatoes, onions and seasoning, mix well. 4. Have on top of bread, roll or crackers. It's yummeh! |
