Curried Egg Salad Sandwiches

Ingredients:
1/2 cup mayonnaise
1/2 teaspoon honey
1/2 teaspoon curry powder
1 dash ground ginger
6 eggs, hard-cooked and chopped
3 green onions, sliced
6 slices whole wheat bread
tomato, sliced (optional)
Directions:
1. In a bowl, blend mayonnaise, honey, curry, and ginger.
2. Stir in eggs and onions.
3. Spread on each slice of bread and top with a tomato slice if desired.
