Curried Egg Salad Sandwiches |

This is a different twist on a classic. It's also a quick fix for lunch or dinner. Thank you Joyce. Ingredients:
1/2 cup mayonnaise |
1/2 teaspoon honey |
1/2 teaspoon curry powder |
1 dash ground ginger |
6 eggs, hard-cooked and chopped |
3 green onions, sliced |
6 slices whole wheat bread |
tomato, sliced (optional) |
Directions:
1. In a bowl, blend mayonnaise, honey, curry, and ginger. 2. Stir in eggs and onions. 3. Spread on each slice of bread and top with a tomato slice if desired. |
