A slight variation on one that appears in Paula Deen's Quick & Easy Meals. Because I'm supposed to be keeping en eye on sodium intake, I used less bacon and subbed reduced sodium for regular, then left out additional salt and upped the curry powder a little. Ingredients:
6 large hard-boiled eggs, peeled and chopped |
4 slices reduced-sodium bacon, cooked and crumbled |
1/4 cup celery, finely chopped |
1 1/2 tablespoons green onions, thinly sliced |
1/4 teaspoon ground black pepper |
1/2 teaspoon curry powder |
6 tablespoons mayonnaise |
8 slices bread |
Directions:
1. Combine first 7 ingredients. Chill for 4 hours to let flavors combine, if you thought ahead. I don't always do that :-( Spread on 4 slices of bread, and top with remaining 4 slices. |
