Curried Cream of Pea Soup |

A lovely spicy soup, perfect for a head cold. Ingredients:
1 cup frozen peas |
1 onion, sliced |
1 stalk celery, sliced |
1 medium potato, sliced |
1 garlic clove, peeled |
1 teaspoon salt |
2 1/2 teaspoons curry powder |
2 cups chicken stock, heated |
1 cup light cream, heated |
Directions:
1. Place the prepared vegetables, garlic, salt, curry powder and one cup of the the stock in a saucepan. 2. Bring to a boil. 3. Cover and simmer for 15 minutes. 4. Transfer to a processor. 5. Blend well. 6. Return the mixture to a saucepan. 7. Reheat. 8. Add the remaining stock and cream. 9. Reheat. 10. Can be served cold with a dollop of whipped cream, chives and parsley. |
