Curried Crab Coleslaw w/ Kickin' Cocktail Mayo |

Simply addicting. I just polished off the leftovers standing in the kitchen! This is an ode to you spice lovers. My contribution to RSC4 Ingredients:
1 large tomato, cored |
2 ounces firm tofu |
1/4 teaspoon curry powder |
3 -4 tablespoons horseradish (depending on heat desired) |
1/4-1/2 teaspoon cayenne powder (again, depending) |
black pepper, to taste |
1 head cabbage, shredded |
3 carrots, julienned or shredded |
1/2 lb imitation crabmeat (1/2 shredded, 1/2 coarsely chopped) |
Directions:
1. Whiz Mayo ingredients in a blender or processor in order directed, correcting seasonings to taste. 2. Mix slaw ingredients in a large tupperware. 3. Add Mayo , put on top and give it a good shake. 4. Best served after refrigerated several hours or a day. |
