Different and delicious. If curry intimidates you, start with half the amount. This recipe is from the Company's Coming - Vegetables cookbook. Ingredients:
2 cups corn kernels (frozen or fresh) |
2 tablespoons margarine |
3 tablespoons onions, finely chopped |
1/2 teaspoon curry powder |
1/2 cup light sour cream |
1/2 teaspoon salt |
1/8 teaspoon ground pepper |
Directions:
1. Put first 4 ingredients into saucepan. Saute for 1 minute. 2. Cover and simmer slowly until tender, about 8 to 10 minutes. Stir often. 3. Add sour cream, salt and pepper. Serves 3. |
