Curried Coconut Carrot Soup |

A simple, delicious soup that is very easy to make. Ingredients:
1 lb carrots, chopped |
1 yellow onion, chopped |
2-3 cloves garlic, minced |
1 1/2 tbsp minced ginger |
2 tbsp madras curry powder(more or less to taste, depending on how spicy you want it.) |
1 14 oz can of coconut milk. |
salt to taste |
1 tbsp cooking oil, whatever you prefer. |
Directions:
1. Chop carrots, onion, garlic and ginger. 2. Add oil to pan, then add vegetables. 3. Saute, covered, stirring occasionally for about 10 minutes. 4. Add curry powder, and continue to saute for another 5-10 minutes, until carrots are soft. 5. Add coconut milk and salt and heat through. 6. Use immersion blender, or transfer to blender and puree. 7. Add salt to taste. 8. Garnish with Green Onions or Cilantro. |
